Great cookbook - but new bakers beware

I have many cookbooks with cookie recipes but this one is the best. It is a must have for both experienced and beginner bakers. The selection is very impressive and the baking tips throughout the book are great. The Essential Chewy Chocolate Chip cookies are the best I have ever made - full of chocolate chips. Everyone at my job loved the Butter Pecan Fantasies even more.

I would have rated this book a 5 except for 1 glaring omission. There isn't one mention in the book about softening the butter or having ingredients such as eggs at room temperature. When I first noticed this, I thought I must be imagining it. They are standard instructions in any other baking cookbook. But I have searched the book from front to back and still don't see any mention of this. This is no big deal for an experienced baker but could cause problems (and discouragement) to new bakers.

I also agree with the other reviewer that it was annoying that some of the recipes included ingredients that were not readily available to most home bakers. Sure, you could order these ingredients from King Arthur Flour. But it takes away the spontaneity of making cookies to have to pre-order an ingredient.

The best for non-professional baking

I am a professionally trained home baker and own over 250 baking books. I also have a set of 16 binders I made for various products and projects while in baking school in the early 2000s along with a ring set of master formulas and a laminated 'cheat sheet'so I can bake any product, anywhere. In fact, I am in the process of writing my own book for like-minded home bakers incorporating many of the tricks and techniques I learned in the fabulous States-side Cordon Bleu-based program I attended (a two year curriculum - now that's thorough!).

So, I didn't need this book, but I was looking for a cookie book to give as a gift for my daughter -- who is a scientist and bakes on the fly -- that would present the standard variety (and hopefully more) in an accurate and easy to follow manner. None of the books I had on my own shelves fit all my criteria, so I did a little exploring on Amazon and found this one. I liked what I read enough to buy a copy for myself, first and have now given it as a gift to many people. I am very happy with it.

Once you know the ratios for each baking product [after all, the same four basic ingredients make up 95% of all baking: flour (base), water/liquid ('reagent'), eggs (leavening), butter/oil (fat)] what matters are the details and particulates added along with the proportions. In culinary school students memorize these ratios so they know the difference between a pancake and a crepe, a biscuit and a muffin. The trained eye can also recognize incorrect 'recipes' and wrong proportions that mean many bookstore baking books are useless and lead to failed projects (this is not a problem in Europe where formulas are considered sacred and product names reflect a standardized version of any baked product - almost as controlled as wines and cheeses! It is more of a dilemma here in the US where anyone can publish a book and call him or herself an expert - thus the dizzying and confusing array of baking books on the market here and their cumbersome size. Recipe books in Europe are concise - a small picture, a bullet list of ingredients, a short paragraph of instruction, since most people know what goes into making a classic croissant, for example and don't need or want every author to repeat it). For that reason, when I peruse baking books, I skip the measurements and instructions and instead merely look for interesting flavors, particulates, embellishments, i.e., the creative and imaginative input of other minds. For the accurate formula for any product, I turn to professional resources.

Now, having said all of that - back to the King Arthur Flour Cookie Companion. This is a great start for home bakers who want accuracy and a thorough range of standard US cookies without being burdened with too much technical information or formulas (recipes) that take too long to prepare. Most people do not have any time to waste. For a professional version of this kind of baking, turn to Wayne Gisslen's two introductory culinary textbooks (baking and cooking) - they are well worth the investment. Short of Gisslen, this book fits the needs of any home baker.

I am particularly impressed by the amount of professional instruction and explanation that they have managed to include without its interfering with getting the project done. There are simply shaded sidebars throughout that give the kind of tips that elevate the amateur product to the professional and commercial level. For example, using Fiori di Sicilia - standard in commercial kitchens, the principle of docking, without which many products will simply fail (pizza principal among them!) and dough relaxers, among others of this genre.

As for the issue that someone raised about the book failing to discuss proper ingredient temperatures, I believe this was done within the descriptions and explanations of the individual products - perhaps not emphasized as much as would be ideal, but again, too much technical information can be offputting to people who are not meticulous. The important thing is to have formulas that work even when today's hurried home bakers are a bit careless. This book provides those kinds of recipes. But, for example, the concept of eggs brought to room temperature is dealt with on page 485. Softened butter is discussed on page 484. Some cookies doughs need to be chilled and that is addressed throughout the book. Cold butter and cold eggs can be a problem when incorporating hot liquids or other hot ingredients but for the most part these are not serious issues when making cookies (in contrast, cold ingredients are key to a successful pie dough, for example).
Do not expect spectacular imagination and decoration from this basic, accurate, how-to instruction reference. You can find all of that in thousands of ordinary cookie books, online, most of them through Amazon. I still buy them from time to time, myself, to stimulate my own creativity.

There are a handful of professional baking books that the serious baker should have (Amendola, Gisslen, etc.). I keep them in one spot on my cookbook shelves. The rest of my baking books are just for their imaginative details - they are inspirational but little more. The reason baking seems daunting is that it is grounded in math, chemistry and biology. The challenge of all that is they are a bit difficult to master at first, but the reward is, once understood and properly employed, a correct knowledge of baking science will mean perfect outcomes, every single time and the ability to make one or a thousand items with rather simple equipment and tools, anywhere you land.

If I had to throw away all my famous-name, home baking cookie books and keep just one, it would be King Arthur's.

King Arthur wins again

I received my copy of the Cookie Companion at 10:30 and I had already baked two of the recipes by 5:00. One of the advantages of this great book--no trips to the store for exotic ingredients. Anyone who is a frequent baker already has everything needed on a shelf in the pantry.

If you live at altitude, page 22 alone is worth the price of the book. Photocopy it and tape it at your baking prep area.

The chapter division in the Companion is very baker friendly. How many times do you say, "I think I want to bake a drop/bar/cutout cookie" and how many times do you just think, "I would like an oatmeal cookie." Go to the chapter for the flavor or main ingredient of what you are in the mood to bake (or have the ingredients for). You will be sure to find a cookie that interests you.

I really liked the wide range of choices offered by the multiple recipes for the old standards. Do you want an oatmeal cookie that is soft, chewey, crisp, etc. You can select a recipe that meets your needs and wants for the moment.

The recipe headers are fun to read. The descriptions are sometimes amusing and it seems that the author is being very friendly and honest...almost like a friend handing you a recipe with his or her opinion of the results to be achieved.

I enjoyed the wonderful illustrations. It is obvious that the artist is quite familiar with baking techniques. The art really enhanced my appreciation of the recipes and the book.

Step by step and easy to follow--trademarks of baking with King Arthur recipes. These could be used by a beginning baker as well as by more experienced cooks. The sidebars contain interesting tips on ingrediets or techniques.

The only negative I have is the touting of some of the more exotic kitchen equipment (which can be purchased from King Arthur's Baker's Catalogue) in the comprehensive equipment listing. But I also read every issue of the catalogue when it arrives, so it is a very minor point.

This is another winner!

Pragmatic approach to water resources

This textbook covers water resources and issues in the US from the viewpoint of an experienced professional. In addition to the chapter topics, sidebars are written by practitioners in various fields and locations. The book summarizes the major federal government agencies that deal with water resources, some state and local departments, and many of the topical not for profit organizations, all of which may help students understand what might be part of a profession in this field.

On the other hand, the book was not comprehensive on the ecology and ecological principles that are involved in water resources. The approach was far stronger in policy and regulation than in ecological considerations.

The value of this book in a course is, as usual, highly dependent upon how the professor uses the text in the course.

Explanations somewhat vague

The text seems as if it was written by an English professor rather than a scientist. The chapter headings are helpful, yet standard to the discipline. Somewhat disorganized, somewhat organized... not as thematic as usual. I used outside resources to understand some of the more fundamental phenomena related to water as the explanations are not entirely clear nor ordered.
Decent graphs/pictures and also background stories relating the text to the real world.
Probably not enough visual aids.

Excellent overview of water issues in the US

This book covers all aspects of water development in the US, with special emphasis on issues affecting the western US. Chapters cover water issues from history to diversion projects to water treatment and beyond. Well written, with lots of good case histories and thorough explanations for the non-scientist and the scientist alike.

About the Author
Ronni L. Gordon, PhD, is a prominent author of foreign language textbooks, reference books, and instructional multimedia programs. She is vice president of Mediatheque Publisher Services, a leader in the development of foreign language instructional materials. She holds a PhD in Spanish language and Spanish and Spanish American literature from Rutgers University, and has taught and coordinated Spanish language programs and taught Spanish American literature at Harvard University and Boston University. An education consultant, she has read in foreign languages for the National Endowment for the Humanities, presented at the United States Department of Education, and consulted on states' K-12 academic standards for world languages. She is an associate scholar of a Philadelphia-based think tank and is chairman of the board of directors of Dolce Suono Ensemble.

David M. Stillman, PhD, is a well-known writer of foreign langauge textbooks, reference books, and instructional multimedia programs. He is president of Mediatheque Publisher Services, a leader in the development of foreign language instructional materials. He holds a PhD in Spanish linguistics from the University of Illinois, and has taught and coordinated foreign language programs at Boston University, Harvard, and Cornell. He teaches languages and linguistics and coordinates an innovative program of student-led conversation practice at The College of New Jersey. He is a frequent presenter at national and regional conventions of language educators, has consulted on states' K-12 academic standards for world languages, and has been appointed to national committees devoted to the improvement of teacher training.

The Gordon-Stillman author team has written more than forty foreign language textbooks, multimedia courses, and reference books.

Pretty reference to Stata graphics (for Stata 10)

This book was written specifically for the graphics capabilities available in Stata 10. For Stata 12, you want A Visual Guide to Stata Graphics, Third Edition. Which is better for Stata 11? Sorry, but I don't know.

THE REVIEW

Stata's graphical facilities have become much more powerful over the years, and with power comes complexity. Michael Mitchell's VISUAL GUIDE TO STATA GRAPHICS does not attempt to tame the complexity; rather, it artfully displays it. This is not a traditional how-to manual; StataCorp already produces one. Instead, it's a very detailed catalog, showing the complete variety of standard Stata graphs, along with the code or menu options (including instructions on how to use the built-in Graphics editor) required to create them. It also quite elegantly displays many of the graphical variants that can be created with common and not-so-common options.

Despite having used Stata for years (since 1995 or so), until very recently I had never created anything more complicated than a simple histogram or scatterplot. When I needed more complex graphics for a presentation earlier this year, I picked up a copy of this book. I found it helpful but limited. The color-coded page edges (visible with the book closed) and the detailed index often -- but not always -- helped me find what I was looking for. The demonstrations of specific options were indispensable.

Probably the biggest limitation of the book is that it covers standard Stata commands only. There are many widely-used, easily-available user-created commands that fill in significant gaps in Stata's graphical repertoire. This omission is understandable and forgivable, but it is still disappointing.

Potential buyers must be cognizant that this is a reference book not a textbook or guidebook. It assumes that the user knows what he/she wants to do and merely needs to be reminded how to do it. The book does not provide guidance about how to select graphical displays for particular purposes, nor does it provide a tour through each kind of graph, talking about where such a graph might be appropriate or how it should be interpreted. Also, it does not discuss how to collapse, reshape, or recode your data in order to create the graph you want, even though these steps are often required.

Must have reference for those doing graphs with Stata

Stata is capable of doing complex and beautiful graphs. But, despite the graph editor that became available in recent versions, it may be quite complicated to get exactly what you have in mind. This book, full of different types of graphs, is an invaluable help. The chapter structure is very clever, making is easy to find the exact detail you need. And, of course, browsing the different graphs is hugely helpful. The book covers virtually all aspects of graph plotting with Stata, from the simple standard options, to the most complex, including graph combining, overlaying, etc. There is also a helpful chapter on the graph editor. It would be impossible to have all answers to everyone's needs in one single book. But, in conjunction with Stata help and manuals, this book makes producing beautiful, cleanly finished graphs a lot easier.

Survival kit in a schizophrenic society

In a world of appearances, a new species of peace-makers has been invented. The priest of old has disappeared. The psychiatrist has replaced him. He is there to listen to secrets, to sort out situations and to propose solutions to human problems. The very few that are worth it can become the saints of today, going to foreign desolate countries and helping people out of their difficulties, fighting poverty and diseases, bringing the christian faith to pagan people, living in suffering and dire hardship. The others are helped to adapt to our society, to be successful in this society without feeling the remorse or the fear that come along with it. They just become adaptable, supple enough to fit in a deeply dishumanized society. The psychiatrist is the go-between for such people.
This play is surrealistic and yet perfectly descriptive of reality. It is full of a new type of poetry, his poetry of love and hate, of a new type of drama, his drama of conflict-solving. T. S. Eliot manages to shift from the most superficial bourgeois drama to the deepest and serenest tragedy turned comedy. The path of these people is tragic in a way, but it ends in beauty or at least in harmony.
Yet I think T.S. Eliot would have been better inspired if he had gotten away from this bourgeois aristocratic society that is nothing but vain cocktail parties and superfluous appearances. The great poet he is could have been a better playwright.

Absurdist Merry Go Round

The piece may be considered a precursor to Edward Albee's works. The opening is the Chamberlaynes' flat. Julia occupies the center of the storytelling. Edward is the host. Julia describes herself as a tough old woman. Edward claims his wife Lavinia is tending an old aunt in the depths of Essex.

After most of the guests exit, Edward is left with the unidentified guest. It is learned that Lavinia has actually left Edward. Edward is told to resign himself to feeling ridiculous. Alex and Peter return. Peter is concerned about his friend, Celia. Alex doesn't want Edward to be alone.

Celia then contacts Edward. She understands that Lavinia has left him. Edward fails to watch the dinner on the stove that Alex cooks for him and it is ruined. Julia returns. Celia remains and announces her interest in Edward to him. Julia's call interrupts the discussion. Her spectacles were left in the kitchen.

The unidentified guest reappears. He tells Edward he will change his mind, but he is not free to change it. Celia and Peter come again. They say Lavinia telegraphed Julia. Lavinia arrives, knowing nothing about a telegram. Peter is going to California and Celia may be going away.

Julia enters and next Alex. Everyone then leaves to accomodate the couple, Edward and Lavinia. Lavinia says she forgot all about the party. Edward tells how he invented an aunt.

In another act Edward tells a doctor how he cannot live with and cannot live without his wife. He says the death of the spirit is terrifying. Lavinia arrives and claims that she merely wanted to talk about her husband, not to meet him in the doctor's office. The doctor says that they are both too ill to enter his sanatorium. He characterizes them as self-deceivers. Celia will enter the sanatorium.

Act Three centers again on the drawing room of the Chamberlaynes. It is two years later. Julia and Alex appear and there is talk of tigers. Peter enters, having left Los Angeles three days earlier. He is a screeen writer. It is learned that Celia has died in a gruesome manner. Peter is disturbed because he doesn't think anything he does is important if Celia is dead. The physician notes that Celia has paid the highest price in suffering. Every moment is a fresh beginning.

Excellent Reference

I've learned a lot from Vaswani. I think he has done an outstanding job of cataloging and summarizing MySQL. You can go to the very good index and find a few references, then find what you need. To me, a good index is a top priority, & Vaswani did a pretty good job with the index.

I did find a few subjects which need more depth, but most subjects were covered well enough to answer my questions.

This 4 star rating is from the perspective of a beginning to intermediate web application developer. My purpose in buying this book was to get from a basic SQL knowledge (via a local community college Oracle class) to a better understanding of MySQL, to use with PHP etc. I am not a systems administrator and have no desire to be one. Just wanted to use MySQL on a couple business projects, and MySQL Complete Reference has definitely helped.

I think it is an excellent choice for a beginning to intermediate LAMP or MySQL application developer. For an application developer, I highly recommend it.

Excellent resource, clearly written, examples throughout

I highly recommend anyone working with MySQL in any capacity to pick up a copy of MySQL: The Complete Reference; it's the most thorough, easy to follow, well laid out book on the subject I've seen (and I have several computer texts, many of which deal with MySQL in some way or other). Every facet of MySQL is covered: system admin, table types and structure, data types, basic to advanced SQL syntax. There are sections dealing with new features in v4.1 (still considered under development as of this writing) such as subqueries (which are going to be a huge help) and other new methods for handling data. My favorite parts of the book are the nested sidebars that have tricks and tips for doing things in one of several different ways, most of which I've never seen before.
The most impressive feature of the book, in my opinion, is the balance between visual examples and technical detail. Usually you find a computer text is strong in one or the other; the author Vikram Vaswani has done an excellent job in illustrating his talent to show the end user exactly what he / she needs to see to understand the task at hand, not to mention his depth of knowledge on the subject. The book has MySQL's logo on it for a reason, people.
I had personally put off purchasing a book on MySQL, instead relying on online documentation and tutorials. When I realized I wasn't moving in the right direction, I took a look at several available texts and chose this one. Even though I've been working with MySQL for over a year, after having read a majority of the book, I can honestly say I've easily doubled my understanding of syntax and the inner workings of MySQL in the past two weeks. Less than half an hour after reading the chapter on JOINS, I was able to construct a complex combination of self and left join that had been eluding me. I'm currently going through several tables and scripts, optimising table structure and syntax based on lessons learned. I only wish I bought two copies, as mine is already dogeared and worn from taking the trip back and forth from home to the office every day!
If you only take one thing away from this review, let it be this: you WILL learn MySQL from this book!!

A good and nearly complete introduction to MySQL

This book provides a good and clear overview of the subject of MySQL. This is a thick book that covers a lot of material. The last Chapters even provided introductions to application development with C, PERL and PHP. MySQL: The complete Reference really seemed like an actual complete reference. While it may not go to deep into every subject it does at least briefly cover each topic. Most of the focus was on SQL (Structured Query Language) though.

There were only a few minor issues with this book aside from minor grammatical errors. For one thing, you would occasionally have to modify the sample tables before you could even start the exercise. Also, it would have been nice having more sample tables and data so I could follow along in more of the examples. Frequently, my result set wouldn't quite match the one in the book. Additionally, some of the command wouldn't even execute or would return an error message. Lastly, the chapters on development were pretty useless unless you are already familiar with one of the languages.

But, I believe many of the above problems where because of version differences and the fact that I was running MySQL on windows. Although windows instructions were given as well the book examples were still more oriented towards a UNIX installation. Also, MySQL would be several versions newer on my computer. I believe that made a difference on some of the results as well. And for windows administration its better just to use one of the suggested GUI programs since many of the commands were difficult to run from the command prompt.

So, I wasn't quite able to follow along with all the examples for one reason or another. Nevertheless, there were still plenty of quality examples I could follow along in. In addition, there was still a lot to learn from just reading through the material. Overall, this book works well as a reference or for working the Chapters in order. Even though the book's user level isn't indicated I believe it provides a fine introduction for a beginner.
