About the Author

In her first book, The Farmstead Creamery Advisor (Chelsea Green, 2010), Gianaclis presented would-be farmer-cheesemakers with a thorough guide to building and running a small, on-farm cheese business. In Mastering Artisan Cheesemaking (Chelsea Green, 2012) she provides guidance on the intricacies of cheesemaking science alongside considerations for preparing each type of cheese variety.

Gianaclis has been teaching all levels of cheesemaking for years, as well as speaking and teaching about the business of farmstead cheese, both at her family's licensed cheese dairy, Pholia Farm, and other venues, including the American Dairy Goat Association annual convention, the American Cheese Society Conference, and the Mother Earth News Fairs.

Gianaclis' aged, raw-milk cheeses have been recognized and applauded by America's foremost authorities on cheese. Pholia Farm cheeses have been included in many major books on artisan cheese, the latest being Max McCalman's Mastering Cheese, in which her Elk Mountain cheese is included in a short list of "rock stars of the 21st century." Her Hillis Peak cheese was the centerfold cheese in the Winter 2010 issue of Culture Magazine. Great up-to-date dairying information

This book is a must have for anyone who is looking for detailed information on operating a smaller dairy operation. Gianaclis Caldwell has a gift for writing easy to read how-to's for those of us who are running a farmstead business or just dreaming of one. This is the perfect companion to her first book "The Farmstead Creamery Advisor". Nowhere else can you find such solid information, from real questions to assess if you are ready to start a dairy, how other successful small dairies operate, and an invaluable list of dairy equipment suppliers. Whether you are milking cows or dairy goats there is something to gain in every chapter from her practical expertise and wisdom.

The only book you need!

I have just about every cheese book written and I really only needed this one. As I am launching my commercial cheese business, this book has been our go to for covering all our bases. It is written in plain, common sense language and will be an invaluable resource for the amateur as well as small professional.

There is nothing else like this on the market

Was so excited to get my copy. Gianaclis' knowledge on the subject is excellent, but even more helpful is the clear writing and the ability to answer the actual questions that need answering rather than giving generalities. The book is well planned and easy to read - even the technical bits. Nothing else like it on the market.
